🌿 Brighton Mojito

A couture take on the classic mojito that’s bright, botanical, and endlessly elegant.

✦ Ingredients (1 serving)

With alcohol:

  • 60 ml (2 oz) white rum
  • 90 ml (3 oz) strong-brewed organic Brighton Tea Rooms Fresh Mint tea (chilled)
  • 20 ml (2/3 oz) fresh lime juice
  • 15 ml (1/2 oz) raw sugar syrup (or honey syrup)
  • 6–8 fresh mint leaves
  • Crushed ice
  • Sparkling water to top

Without alcohol:

  • Replace the rum with 60 ml sparkling water or ginger ale
  • Everything else remains the same

✦ Method

  1. Muddle the mint:
    In a tall glass, gently press mint leaves with lime juice and sugar syrup using a muddler or the back of a spoon — just enough to release the oils, not shred the leaves.
  2. Add the base:
    Pour in the chilled mint tea and rum (or non-alcoholic substitute). Stir lightly to combine.
  3. Fill and fizz:
    Add crushed ice until the glass is almost full. Top with a splash of sparkling water and stir again from the bottom up to lift the mint.
  4. Garnish and serve:
    Slap a mint sprig between your palms to release aroma and nestle it on top. Add a thin lime wheel or dehydrated lime slice for garnish.

✦ Presentation Tip

Serve in a highball glass or a crystal tumbler with a silver straw.
For a Brighton Tea Rooms twist, dust the rim with a mix of fine sugar and dried mint powder.
