🥒 Cucumber & Herbed Cream Cheese

Ingredients

  • Thinly sliced English cucumber
  • 125 g cream cheese, softened
  • 1 tbsp chopped chives or dill
  • Salt & pepper
  • Thin white sandwich bread

Method

  1. Mix cream cheese with herbs, salt, and pepper.
  2. Spread thinly on bread.
  3. Layer cucumber slices evenly.
  4. Top with another slice, press gently, remove crusts.
  5. Slice into neat rectangles or triangles.

🐟 Smoked Salmon & Dill Crème

Rich, silky, with a whisper of luxury.

Ingredients

  • Smoked salmon slices
  • 2 tbsp crème fraîche or mayo
  • 1 tsp lemon zest
  • 1 tsp chopped dill
  • Thin rye or brown bread

Method

  1. Combine crème fraîche with lemon zest and dill.
  2. Spread thinly on bread, layer with smoked salmon.
  3. Top with bread, remove crusts, slice into fingers.

Ingredients

  • 3 hard-boiled eggs, peeled
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard (optional)
  • Salt & pepper
  • Small bunch watercress leaves
  • White or wholemeal bread

Method

  1. Mash eggs with mayo, mustard, and seasoning.
  2. Spread onto bread, top with a few sprigs of watercress.
  3. Sandwich together, trim crusts, slice.
